Castelnaudary - September 5

We are seven friends traveling the Canal du Midi from Castelnaudary to Port Cassafieres. We will travel about 250 kilometers over the next 2 weeks, navigating through a series of locks as we travel to the Mediterranean. This blog will contain many selections from reference materials (brochures, guide books, Wikipedia, etc...); none of which will be cited except in this general comment. Entries will be posted as the limit of network availability permits.

Jan dishes up cassoulet - a wonderful dish with made of white beans, duck, and sausage. As legend has it, this dish was invented in the middle of the Hundred Years' War when the English were attacking Castelnaudry. To encourage their armies, the cooks of the region brought all their reserves together to make a stew; with their strength restored their soldiers pushed the enemy back to the shores of the English Channel! A true cassoulet is made in a cassole, a shallow earthenware bowl.
